I move the wine from the oak barrel to the steel barrel. After the sediment is settled I move it back to the oak barrel. This bottle of wine show me process...

I like these days with a mild climate during summer. The wine is over the phase of its transition. The oaky, caramell flavours of the barrel is right in the middle of the taste.

My Tokaji furmint reached a first stage of quality in these weeks. It is in the barrels but as I filtered it shows its basic character for the future. I am going to taste it more times in the next weeks and try to memorize this character.

Today I simply checked the cellar. Some dust on the barrels appeared as the outside air is warmer and it flows in the cellar. I observe the wines in the barrels. Still. Some quiet moments.

I sit at the cellar door today. Nobody comes. Sometimes a car goes on without  rush. No task today in the cellar. Unbelievable. Or this is my decision for now. I do this cellar because I like this work and I love to spend time here and just look at it.
During the recent years I created a rhythm. Or a rhythm I did not know before created me. It is about time. This work is time. The time of the wine. I wait for it then I do the work. This is winemaking.

As I decided two weeks ago, I moved the wine from the steel barrels to the oak. I started the preparation during the dawn to leave enough time for my slow work. Around noon, I finished pumping the wine.
Later in the afternoon I washed all the accesories in the yard when sun were shining brightly. I saw a stork flying slowly above the hillside. A real sign of the spring... as among these mountains of Zemplén seasons tends to arrive late.

As I went back to my oak barrels I discovered the signs of their years spent in the cellar. Some dust, differently colored or just have a "used" look. The timing if the cellar slowed down everything. One time unit is  one year for the barrels.

Spring arrived in my cellar as I opened the small windows of the cellar door. Air may circulate from now on.  The outside warm heats the cellar temperature to 8-9 degrees.

As I checked the 2009 wine in the steel barrels I decided to filter and put it back to their oak barrels next week.

My wine cellar visit was a relaxation today. I only hanged around doing almost nothing in the cellar. I cleaned some oak barrels on their outside surface and meditated on the temperature differences between the cellar and the outside winter world.
